Also known as Chicken Potato Chip Casserole. I received this recipe from an old co-worker. His mom had been making it since he was a kid. This has now jumped to my husband's favorite.

Ingredients :

• 2 pounds boneless chicken breasts
• water to cover
• 2 (1.5 ounce) packages potato chips, crushed
• ½ cup butter
• 1 yellow onion, diced
• 1 (8 ounce) package fresh mushrooms, sliced
• 1 green bell pepper, diced
• 1 red bell pepper, diced
• ½ cup all-purpose flour
• 2 cups milk
• 1 (8 ounce) package American cheese slices
